Smoky BBQ Pulled Pork Sandwiches

There’s nothing quite like smoky BBQ pork sandwiches after a long day outdoors. This recipe is designed for the campfire or grill, with a flavourful dry rub, homemade BBQ sauce, and plenty of melt-in-your-mouth pulled pork to satisfy the whole crew. It's messy, juicy, and exactly what a good camping dinner should be.

Whether you're out for a weekend adventure or firing up the grill in your back garden, this one’s a keeper.

🧂 Ingredients

For the Pork: 

1.5kg (3 lbs) pork shoulder, boneless2 tbsp smoked paprika1 tbsp garlic powder1 tbsp onion powder1 tbsp mustard powder1 tsp cayenne pepper (optional, for heat)2 tsp salt, 1 tsp black pepper, 2 tbsp olive oil.

For the BBQ Sauce: 

1 cup ketchup, ½ cup apple cider vinegar, ½ cup brown sugar, 2 tbsp Worcestershire sauce, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder.

For Serving: 

Brioche buns, Coleslaw (optional), Pickles (optional).

🔥 Instructions

1. Prepare the Pork:

In a small bowl, mix the smoked paprika, garlic powder, onion powder, mustard powder, salt, pepper, and cayenne (if using). Rub the spice mixture generously over the pork shoulder. Let it sit while you prep the BBQ.

2. Cook the Pork:

On the BBQ:

Preheat your BBQ for indirect cooking to 120°C (250°F). Add wood chips for extra smokiness if you have them.

Place the pork on the grill, away from direct heat, and cook for 6–8 hours until it reaches an internal temperature of 95°C (203°F).

In the Oven (if you're prepping ahead or cooking at home):

Wrap the pork in foil and roast at 150°C (300°F) for 5–6 hours, or until fork-tender.

3. Make the BBQ Sauce:

While the pork cooks, combine all BBQ sauce ingredients in a saucepan. Simmer over low heat for 10–15 minutes, stirring occasionally, until thickened slightly. This homemade sauce is the secret star of the sandwich!

4. Shred the Pork:

Once the pork is done, let it rest for 20 minutes. Then use two forks to shred it into bite-sized pieces. Toss with half of the BBQ sauce.

5. Assemble the Sandwiches:

Toast your brioche buns on the grill for that perfect golden crunch. Layer pulled pork, a drizzle of extra BBQ sauce, and add a scoop of coleslaw or pickles if desired.

6. Serve and Enjoy:

Grab napkins – it’s going to get messy! These sandwiches pair perfectly with a cold cider or any refreshing drink. Easy to prepare, loved by all ages, and ideal for outdoor meals.
